1 teaspoon kosher salt
2 tablespoons butter
Salt and black pepper, to taste
For the No Manches Pulled Pork
3 cups cooked pulled pork
3/4 cup No Manches Don Juan Original BBQ Sauce
1 tablespoon fresh lime juice
1/2 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/4 teaspoon chipotle powder, optional
For Loading Them Up
1 1/2 cups shredded cheddar cheese
1/2 cup sour cream
3–4 green onions, thinly sliced
Extra No Manches Don Juan Original BBQ Sauce
Fresh or pickled jalapeños, optional
How to Make Loaded BBQ Pulled Pork Potatoes
1. Bake the Potatoes
Preheat your oven to 425°F.
Scrub the russet potatoes thoroughly and dry them completely.
Pierce each potato several times with a fork, then lightly coat the outside with olive oil and kosher salt.
Place them directly on the oven rack or on a baking sheet.
Bake for approximately 50–70 minutes, depending on their size, until the skins are crisp and the centers are completely tender.
A knife should slide easily into the center.
2. Bring on the No Manches Pulled Pork
While the potatoes finish baking, place the cooked pulled pork in a skillet or saucepan over medium-low heat.
Add:
3/4 cup No Manches Don Juan Original BBQ Sauce
1 tablespoon fresh lime juice
1/2 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/4 teaspoon chipotle powder, if you want some extra heat.
Stir gently until the pork is hot and coated in that sticky BBQ sauce.
Don't drown the pork.
We want saucy pulled pork that still tastes like smoked meat.
3. Open & Fluff the Potatoes
Remove the potatoes from the oven and carefully slice each one lengthwise through the top.
Don't cut all the way through.
Gently squeeze the ends toward the center to open the potato.
Use a fork to fluff up the inside.
Add a little butter, salt and black pepper while the potato is still steaming hot.
Now we've got the foundation.
Time to load it up.
4. Add the Cheese
Sprinkle a generous amount of shredded cheddar into each hot potato.
Let the heat from the potato begin melting the cheese.
For an extra gooey potato, put the potatoes back into the oven for 2–3 minutes until the cheddar is completely melted.
You want that melted cheese underneath the pulled pork just like in your photograph.
5. Pile on the BBQ Pulled Pork
Now spoon a generous mound of the hot No Manches BBQ pulled pork over each potato.
And when we say loaded, we mean loaded.
Let some of the pork and sauce fall over the sides.
That's part of the experience.
Drizzle a little additional No Manches Don Juan Original BBQ Sauce across the pork.
6. Finish It Like the Photo
Now we're going to recreate the finished potato in your picture.
Top each potato with:
Melted Cheddar Cheese
No Manches BBQ Pulled Pork
Extra No Manches Don Juan Original BBQ Sauce
A Generous Spoonful of Sour Cream
Fresh Sliced Green Onions
For a little Mexican-inspired heat, add sliced fresh or pickled jalapeños.
Then give it one last small drizzle of BBQ sauce.
7. Serve It Hot
Serve the potatoes immediately while the centers are fluffy, the cheese is melted and the pulled pork is piping hot.
Make sure there's a bottle of No Manches Don Juan Original BBQ Sauce on the table.
Somebody is going to add more.
🔥 Don Juan's Loaded Potato Tips
Use large russet potatoes. Their thick skins crisp nicely while the centers become light and fluffy.
Oil and salt the outside before baking for a better potato skin.
Don't wrap the potatoes in foil if you're after crispy skin.
Warm the pulled pork slowly with the BBQ sauce so it stays juicy instead of drying out.
Put the cheese underneath the pork so the heat melts it right into the potato.
Then finish with cold sour cream and fresh green onions for contrast.
And don't be afraid to overload it.
It's called a loaded potato for a reason.

Sweet & Tangy Version
Here's another variation that would give you a reason to feature your second sauce on the Recipes page.
Replace the Original BBQ with No Manches Don Juan Sweet & Tangy BBQ Sauce.
The honey and balsamic notes in Sweet & Tangy would work especially well with smoky pulled pork, melted cheddar and the creamy potato.
You could even offer both versions on the recipe:
Original — Bold & Savory
