These aren't side-order fries.

Our Loaded Mexican BBQ Fries start with hot, crispy seasoned fries and pile on smoky pulled pork, melted cheddar, crispy bacon, jalapeños, green onions and No Manches Don Juan Original BBQ Sauce.

Every bite gives you crispy potatoes, smoky meat, gooey cheese, a little jalapeño heat and that bold Mexican-Texas BBQ flavor.

Serve them as an appetizer.

Serve them on game day.

Or forget everybody else and call them dinner.

Ingredients

For the Crispy Fries

  • 2 pounds frozen restaurant-style French fries or 4 large russet potatoes cut into fries

  • 1 tablespoon olive oil, if baking

  • 1 teaspoon kosher salt

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon chili powder

  • 1/4 teaspoon ground cumin

  • Freshly ground black pepper, to taste

For the No Manches BBQ Pulled Pork

  • 2 cups cooked pulled pork

  • 1/2 cup No Manches Don Juan Original BBQ Sauce

  • 1 tablespoon fresh lime juice

  • 1/2 teaspoon chipotle powder, optional

For Loading the Fries

  • 1 1/2 cups shredded cheddar cheese

  • 6 slices bacon, cooked and crumbled

  • 1–2 jalapeños, thinly sliced

  • 3 green onions, thinly sliced

  • Extra No Manches Don Juan Original BBQ Sauce

  • Sour cream, optional

  • Fresh cilantro, optional


How to Make Loaded Mexican BBQ Fries

1. Get Those Fries Crispy

Cook the fries according to the package directions until deep golden and crispy.

If you're using fresh potatoes, rinse the cut fries in cold water to remove excess starch, then dry them thoroughly before cooking.

Whether you're using the oven, air fryer or fryer, don't overcrowd them.

Crispy is the goal.

We're about to cover these things with pulled pork, cheese and BBQ sauce, so they need some backbone.


2. Season Them No Manches Style

While the fries are still piping hot, season them with:

Kosher Salt

Garlic Powder

Smoked Paprika

Chili Powder

Ground Cumin

Black Pepper

Toss until everything is evenly coated.

This gives the fries a subtle Mexican-inspired smoky seasoning before we even start adding the toppings.


3. Make the No Manches Pulled Pork

Place the cooked pulled pork in a skillet over medium-low heat.

Add No Manches Don Juan Original BBQ Sauce, fresh lime juice and optional chipotle powder.

Stir gently and heat until the pork is hot and coated with sauce.

You want the pork moist and saucy without turning it into soup.

Remember—the fries still need to stay crispy underneath.


4. Build the First Layer

Spread the hot fries onto an oven-safe platter, cast-iron skillet or baking sheet.

Now add:

Half the Cheddar Cheese

The Remaining Cheddar

Getting some cheese underneath and some over the pork helps hold everything together.


5. Melt the Cheese

Place the loaded fries into a hot oven for approximately 3–5 minutes, just until the cheddar is completely melted.

Don't leave them in there forever.

The fries are already cooked.

We're just looking for hot pulled pork and gloriously melted cheese.


6. Load Them Up

Now we're going to finish them like the fries in your picture.

Top the hot fries with:

Crispy Bacon

Sliced Jalapeños

Fresh Green Onions

Extra No Manches Don Juan Original BBQ Sauce

Add sour cream or fresh cilantro if you want another layer of Mexican-inspired flavor.

Then give the whole thing one final drizzle of sauce.

This is not the time for restraint.


7. Serve Immediately

Loaded fries wait for nobody.

Get them to the table while the fries are still crispy, the cheese is melted and the pulled pork is hot.

Serve with extra No Manches Don Juan Original BBQ Sauce on the side for dipping.

Forks are technically optional.

Get the fries extra crispy before adding the toppings. They're going underneath warm pork, cheese and sauce, so starting with soft fries is asking for trouble.

Warm the pulled pork separately instead of piling cold pork onto the fries.

Use cheese both under and over the pulled pork for better coverage.

Don't add all the BBQ sauce at once. Put some in the pork and drizzle more over the finished fries.

Fresh jalapeños give you a crisp bite and more heat. Pickled jalapeños give you a tangier, slightly milder finish.

And once they're assembled...

Eat them.

Loaded fries don't improve while sitting around.
