No Manches Don Juan Mexican BBQ Bacon Cheeseburger

This is the kind of burger that requires two hands.

A juicy seasoned beef patty gets topped with melted cheese, crispy bacon, fresh lettuce, ripe tomato, red onion and pickles, then finished with a smoky No Manches Don Juan Original BBQ burger sauce and stacked inside a toasted brioche bun.

The result is sweet, smoky, savory, a little spicy and seriously messy—in exactly the way a great BBQ burger should be.

Ingredients

For the Burgers

  • 1 1/2 pounds 80/20 ground beef

  • 1 teaspoon kosher salt

  • 1 teaspoon coarse black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon chipotle powder, optional

  • 4 slices cheddar or pepper jack cheese

  • 8 slices thick-cut bacon

  • 4 brioche hamburger buns

  • Butter for toasting the buns

For the No Manches BBQ Burger Sauce

  • 1/2 cup No Manches Don Juan Original BBQ Sauce

  • 1/4 cup mayonnaise

  • 1 teaspoon fresh lime juice

  • 1/2 teaspoon chipotle powder or chipotle hot sauce, optional

For Topping

  • Green leaf lettuce

  • Sliced ripe tomatoes

  • Thinly sliced red onion

  • Dill pickle slices

  • Extra No Manches Don Juan Original BBQ Sauce


How to Make It

1. Make the No Manches Burger Sauce

Combine the No Manches Don Juan Original BBQ Sauce, mayonnaise and fresh lime juice.

For a little more heat, mix in chipotle powder or your favorite chipotle hot sauce.

Refrigerate while you prepare the burgers.

That little bit of lime and chipotle turns our Original BBQ into a creamy Mexican-inspired burger sauce that works with everything we're about to pile onto this burger.


2. Cook the Bacon

Cook the bacon until browned and crispy.

Transfer it to paper towels and set aside.

And whatever you do, don't forget about it.

We're building a serious burger here. The bacon has a job to do.


3. Make the Burger Patties

Divide the ground beef into four equal portions and gently form them into patties slightly wider than your buns.

Don't overwork the beef. Loosely formed patties stay more tender.

Combine the salt, pepper, garlic powder, onion powder, cumin, smoked paprika and optional chipotle.

Season both sides generously.

Press a small indentation into the center of each patty with your thumb. This helps the burgers cook more evenly.


4. Fire Up the Grill

Preheat your grill to medium-high/high heat.

Place the patties over direct heat and let them develop a good sear before flipping.

Avoid constantly pressing down on them with your spatula—you'll squeeze out the juices you want inside the burger.

Cook until the burgers reach your preferred doneness and a safe internal temperature.


5. Bring on the No Manches

During the final few minutes of cooking, brush each burger with a layer of No Manches Don Juan Original BBQ Sauce.

Flip briefly, brush the other side and allow the sauce to caramelize.

Now add your cheese.

Close the grill just long enough for the cheese to melt over the patty.

You want that combination of charred beef + melted cheese + caramelized BBQ sauce in every bite.


6. Toast the Buns

Lightly butter the cut sides of the brioche buns.

Place them cut-side down on the grill for a minute or two until they're golden and lightly toasted.

Don't skip this.

A toasted bun tastes better and stands up to the sauce and juicy burger without falling apart.


7. Build the No Manches Burger

Now comes the good part.

Spread some of the No Manches BBQ Burger Sauce onto the bottom bun.

Then build it up:

Green Leaf Lettuce
Tomato
BBQ-Glazed Beef Patty
Melted Cheese
Crispy Bacon
Dill Pickles
Red Onion
Extra No Manches BBQ Burger Sauce
Toasted Brioche Top Bun

Push it together.

Use 80/20 ground beef for a burger that's juicy enough to stand up to all those toppings.

Don't overwork the meat when forming the patties, and don't smash the burgers with your spatula while they're cooking.
