Smoky, cheesy, spicy and loaded with flavor, this No Manches Don Juan Mexican BBQ Burger brings together a juicy grilled beef patty, melted cheese, fresh jalapeños, red onion, crispy onions and plenty of No Manches Don Juan Original BBQ Sauce.
The burger gets its Mexican-inspired character from cumin, chile, garlic, smoked paprika and jalapeños, while our Original BBQ Sauce brings the Texas barbecue side of the equation.

Ingredients
For the Mexican-Spiced Burgers
1 1/2 pounds 80/20 ground beef
1 teaspoon kosher salt
1 teaspoon coarse black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon chipotle powder, optional
4 slices cheddar, American or pepper jack cheese
4 brioche hamburger buns
1 tablespoon butter, for toasting the buns
For the No Manches BBQ Glaze
1/2 cup No Manches Don Juan Original BBQ Sauce
1 tablespoon fresh lime juice
1 teaspoon honey, optional
1/2 teaspoon chipotle powder, optional for more heat
For the Toppings
1–2 fresh jalapeños, thinly sliced
1 small red onion, thinly sliced
1/2 cup crispy fried onions
Extra No Manches Don Juan Original BBQ Sauce
Pickled jalapeños, optional
How to Make It
1. Make the No Manches BBQ Glaze
Combine No Manches Don Juan Original BBQ Sauce with the lime juice.
If you like your BBQ burger a little sweeter, add the honey.
Want more heat? Add the chipotle powder.
Stir until combined and set aside.
2. Make the Mexican-Spiced Burger Patties
Divide the ground beef into four equal portions and gently form them into patties slightly larger than your buns.
Don't pack the meat too tightly.
Combine the salt, black pepper, garlic powder, onion powder, chili powder, cumin, smoked paprika and optional chipotle.
Season both sides of each burger generously.
This seasoning is where we start building that combination of Texas barbecue and Mexican-inspired flavor before the sauce ever hits the grill.
3. Fire Up the Grill
Preheat your grill to medium-high/high heat.
Place the burgers over direct heat and let them cook without constantly moving them around.
Once you've developed a good sear, flip the patties.
And resist the temptation to smash them down with your spatula.
Those juices belong inside the burger, not at the bottom of your grill.
4. Bring on the No Manches
When the burgers are nearly finished, brush the tops generously with the No Manches BBQ glaze.
Flip briefly to caramelize the sauce, then brush the other side.
Keep an eye on them—the sugars in BBQ sauce can go from beautifully caramelized to burned quickly over high heat.
Now add a slice of cheese to each burger.
Close the grill and let the cheese melt right over the BBQ-glazed beef.
5. Add the Jalapeños & Onions
For a burger like the one in your picture, you can use the jalapeños and red onions fresh—or give them a quick trip across the grill.
For a slightly softer topping, toss the sliced jalapeños and red onions onto a grill-safe pan for a few minutes.
You still want some texture.
The jalapeños bring the heat while the red onion gives the burger some bite to balance the rich beef, cheese and BBQ sauce.
6. Toast the Buns
Lightly butter the inside of each brioche bun.
Place the buns cut-side down on the grill until lightly golden and toasted.
A toasted brioche bun gives you a little sweetness while also helping the bun stand up to all that sauce.

Don't be shy with the toppings.

Use 80/20 ground beef. The extra fat helps produce a juicier burger and carries all those spices beautifully.
Don't overwork the meat when making the patties.
Season the outside generously instead of mixing everything deep into the ground beef.
Add No Manches Don Juan Original BBQ Sauce toward the end of grilling so it caramelizes without burning.
Fresh jalapeños give you a brighter, sharper heat. Pickled jalapeños give you more acidity and tang. Use whichever you prefer—or use both.
And don't forget the crispy onions. That crunch against the melted cheese and juicy beef makes a difference.
